Scallop, Cabbage, Apple & Coriander by Parkhotel Vitznau

The nutty, velvety scallop is accompanied by earthy cabbage and sour green apple. The coriander acts as a counterpart, giving the dish an exotic touch. The dish plays with crisp and sour components, like the pearls of a glass of cold Gramona Imperial dance on the palate.

After I met Sandro Sieber about 3 years ago at Gramona, this excellent house has not left me alone. It stands for PURE quality, time and down-to-earthness. We were allowed to send a member of the team to Gramona this summer and she brought us some souvenirs directly from Gramona. The result is a great combination of product, fragrance and texture: we call it Amuse PURE (Product/Unique/Respect/Excellence)

Hidden Oyster   by The Omnia

Juicy Gillardeau oyster, crunchy blue Swiss shrimp, caviar from Paris, all hidden under nutty artichoke and framed by a chilled Gramona Imperial Beurre Blanc. It takes strong products to do justice to the Gramona Imperial Gran Reserva, which with its distinctive yeast harmonizes perfectly with the nutty-iodic creaminess of our Amuse Bouche.
