The Swiss Gramona Amuse Competition 2021

Smith and Smith and Gramona invite you to the third Swiss Gramona Amuse Contest. The third Gramona Amuse Contest focuses on the creation of an Amuse Bouche that can be combined with one of the three Gramonas (Corpinnat Brut “La Cuvee”, Corpinnat Brut “Imperial”, Corpinnat Brut Nature “III Lustros”). Also in 2021, a jury of experts consisting of well-known chefs and sommeliers will judge the Amuse Bouche.

NEW: Smith and Smith and Gramona specify the task in 2021 «from forest to fork». Straight from the forest, from the meadow or from the traffic circle? More and more intensively, the topic of “foraging” is becoming the focus of interest for top chefs worldwide. This year, collecting, serving and foraging local ingredients is the focus of the Gramona Amuse Contest. It’s a theme for which every conceivable preservation method comes into question, especially if you want to bring the full flavor of the season and nature to the point in an amuse bouche. In this edition the sommelier is free to select one of the three Gramonas – Corpinnat Brut “La Cuvee”, Corpinnat Brut “Imperial”, Corpinnat Brut Nature “III Lustros”. He/she decides witch wines fits best with the Amuse Bouche.

Only catering companies in Switzerland such as restaurants, hotels, and food service companies can participate, registrations from individuals and freelancers are not processed. Only one application per company will be accepted.

 

TAKE PART

  1. Register for the contest between 1 April and 31 August 2021.
    • a chef and a wine enthusiast can register as a team only
    • one registration per catering company (restaurant, hotel, food service company) is accepted
    • the company must be located in Switzerland
    • Choose if you want to take part in the public online voting or want to be selected by the expert jury only
  2. Receive three free bottles of Gramona Corpinnat Brut “La Cuvee”, Corpinnat Brut “Imperial”, Corpinnat Brut Nature “III Lustros” to taste it and be inspired.
    • You receive instructions how to submit the photo, description and recipe.
  3. Create an amuse-bouche which machtes perfectly to one of the three Gramonas.
  4. Send a comprehensive description, a good photo and the recipe of your creation until 15 September 2021.
    • Find example pictures of an amuse
    • The expert jury must understand which ingredients and techniques have been used
    • You are free to choose dishes (plate, glass, spoon) and ingredients
    • If no description, photo and recipe is received, the bottle Gramona will be charged
    • Please do not submit predishes, main dishes, only real amuse-bouche will be accepted

FINALISTS SELECTION

  1. From the entries, the jury/public will select 10 amuses to go to the final
  2. All submitted amuse-bouches will be presented anonymously to the jury
    • The jury selects 9 finalists in October 2021
    • They decide based on the submitted photo, recipe and description
  3. If you have chosen to take part in the public online voting, your amuse-bouche will be presented anonymously for the voting on this website
    • The public online voting lasts from 1 July to 30 September 2021
    • 1 finalist will be selected by the public online voting
  4. The finalists will be announced in the beginning at October
  5. The 10 finalists will be announced ca. 3 weeks before the final
  6. The finalists are invited to recreate and present their amuse-bouche on Sunday, 24 October 2021 at the final competition

FINAL COMPETITION

  1. The final competition and gala takes place at the Schweizerische Hotelfaschschule Luzern on 24 October 2021.
  2. The 10 finalists will be invited to recreate and present their amuse to the professional jury.
    • The amuse must be explained orally by the chef and the wine enthusiast
  3. After tasting all the final amuses, the jury deliberates in a closed room
    • The jury judges the amuse on taste, texture, presentation, originality and most importantly, the combination with the Gramona Imperial Brut.
  4. Accordingly, the winner will be announced and after the award ceremony the goodbye Apéro starts.
